Easy No-Bake Berry “Cheesecakes”

You won't need to turn on the oven to make these. You could even get by without using any countertop appliances. All you need to do is blend together Greek yogurt, cream cheese, a bit of icing sugar until smooth, dollop this mixture on top of crushed graham crackers, and garnish with berries – easy cheesy!



Makes 4 servings


Ingredients


1 cup plain Greek yogurt

6 tbsp light cream cheese, softened

2 tbsp icing sugar

6 graham cracker sheets, coarsely crushed (about 100 g or 1¼ cup), divided

1 cup berries (chopped or sliced, if using larger berries)


Instructions


Using a mini food processor or handheld blender, combine the yogurt, cream cheese, and icing sugar together until smooth. (This can be done by hand instead, but the mixture will not end up being quite as velvety.) Let the mixture chill and thicken slightly in the refrigerator for at least 30 minutes.


Divide the crushed graham crackers among 4 small bowls; pat down lightly to cover the bottoms of the bowls to form "crusts".


Divide the cream cheese mixture among the “crusts”. Garnish the “cheesecakes” with the berries.


Note: a bit of vanilla extract and/or finely grated lemon zest would be lovely in the yogurt mixture.
